
DINING IN FRANCE: TROISGROS: KING OF CHAMBERTIN (TV)
Summary
One in this series, hosted by Pierre Salinger, about dining in France, with subjects ranging from great contemporary chefs to the production of local food and drink. This episode is about the Burgundy region, the "belly" of France, and local chef Pierre Troisgros. Salinger visits his restaurant Les Freres Troisgros in Roanne, where he works side-by-side in the large kitchen with his son Michel. Troisgros believes in serving each dish on a perfectly finished plate, a tradition of nouvelle cuisine. Salinger looks at the great wine of burgundy as Troisgros visits a local winemaker. There, he enjoys a wine with some "muscle." Then, Troisgros is given a tour of the Chambertin-Clos de Beze grape field. Next, Salinger looks at the regions exceptional Charolais cattle. Troisgros visits a cattle market in Charolles to find his cuts. Then, Salinger looks at what nouvelle cuisine entails and how Troisgros believes in running a restaurant with numerous workers with many different tasks. Then, Troisgros and his staff prepare a special meal for Salinger. But, first he talks about Charolais cattle and his love for beef. Salinger's meal includes rare Charolais steak with Bordelaise sauce and potatoes. Over the meal, Troisgros talks about his deceased brother Jean, recalling him fondly. Next, Michel shows how to make escalope de saumon a l'oseille (salmon scallops with sorrel sauce), one of the restaurant's most famous and oft-imitated recipes. Finally, locals celebrate the wines of the region and Troisgros is named the yearly "King of Chambertin." Includes two program-sponsored commercials.
