
IN JULIA'S KITCHEN WITH MASTER CHEFS {LEAH CHASE}

Summary
In this cooking program, Julia Child takes a
comprehensive look at contemporary American cooking
with nationally recognized master chefs. In this
episode, Child is joined by Leah Chase of Dooky Chase in
New Orleans. For the first dish, fried chicken, Chase
shows how to cut the chicken before seasoning it with
salt and pepper. Then, she makes an "egg wash" batter
using evaporated milk and water before she adds the
chicken pieces. Next, she rolls the chicken in a
seasoned salt, black pepper, and flour mix before
dunking the battered pieces in a vegetable oil and
frying them. She garnishes the finished product with
parsley and oranges. For the next dish, Chase makes
some "real Southern" biscuits. Chase starts with flour
and adds baking powder, sugar, milk, and shortening.
She then pats the mixture flat and cuts out some round
dough mounds for baking. Next, Chase prepares "the best
sweet potato pie that ever was." She begins by adding
some chopped pecans to the flour, as well as salt,
shortening, and ice water, then squeezing the mixture
together. The dough is padded out in a pie tin and
briefly pre-baked. Then, Chase works on the filling,
mashing some peeled and boiled sweet potatoes, after
which she mixes in sugar, cinnamon, grated nutmeg,
eggs, condensed milk, vanilla, and melted butter. After
ladling the filling over the partially-baked crust,
Chase dresses the top of the pie with pecans and
cinnamon before putting it in the oven. She ultimately
adds a dollop of whipped cream to the finished product.
